Chicken with rosemary & garlic Casserole


You' ll need:
-8 pcs chicken thigh cutlets with skin on
-1 potato, cubed
-1 carrot, cubed
-2 tablespoons of plain flour
-2 teaspoons of paprika
-1 teaspoon of black pepper
-1 tablespoon of olive oil
-4 cloves of garlic, unpeeled
-1 teaspoon of rosemary
-1 cup of chicken stock
- half cup of whipping cream
- half cup of dry white wine ( i used chinese rice wine)

Just:
1. Place washed chicken pieces into a plastic bag, added plain flour, paprika & pepper and toss the chicken pieces to coat them thoroughly.
2. Preheat oven at 220 degree C for 10 mins.
3. Heat olive oil in flying pan, brown chicken pieces, both sides.
4. Separately, I heat some olive oil, to cook potatoes, carrot, garlic & rosemary, then I added chicken stock, wine and cream and bring to boil in the casserole dish over low heat.
5. Place chicken pieces into the casserole and then place uncovered into oven and bake for 30mins at 200 degree C.

Viola! Careful the chicken pieces are super burning hot on the inside, NEVER sink your teeth into it right away cos it will burn your tongue! Speaking from recent experience!

Tip:
Leftover sauce can be kept to cook spaghetti :)

Pork Ribeye Steak with Potato & Mushroom Gratin


What you need:
Pork ribeye steak:
-pork ribeye steak cuts
-carrot, cut
-frozen mixed vegetable
-steak sauce
-onion & garlic, chopped
-olive oil
-salt & pepper, garlic salt
-cornflour
Potato & mushroom gratin:
-3 large potatoes, sliced
-1 can of button mushroom, sliced
-thyme, salt & pepper
-butter
-3 quarter cup whipping cream

For the pork ribeye steak:
1. seasoned pork with garlic salt & pepper & cornflour and set aside 
2. cut carrot & set aside some frozen mixed veg
3. chop onion and fry with olive oil, add carrot
4. fry the pork steak, brown both sides, add mushroom & mixed veg
5. pour in my steak sauce and leave it to simmer.

Potato & mushroom gratin:
1. slice potato & soak in salt water
2. butter a casserole bowl, preheat oven at 200 degree C for 10mins
3. fry mushroom, garlic & potato with olive oil
4. grate cheddar cheese, set aside
5. place 1 layer potato, addsalt&pepper, sprinkle thyme, add a layer of mushroom & cheese. repeat for 3 layers, ending with top layer of potato, sprinkle some cheese.
6.pour in some whipping cream.
7.bake at 220 degree C for 30mins

That's all, I added some cut fruits on the side, don't forget to add some TLC :)

Apple Cinnamon Filo Pastry Rolls




Really easy to make!
All you need:
- apple cut into thin slices
- butter
- sugar
- vanilla essence
- cinnamon
- toasted almond flakes
- raisins
- filo pastry sheets
- icing sugar

Simply:
1. Melt butter on pan.
2. Add apple slices, sugar, vanilla essence, cinnamon, almond flakes and raisins and boil on low heat till apples are soft
3. Butter each filo pastry sheet, 3 layers to place on top of each one, wrap the apple mix and line the baking tray with baking sheet, place your apple rolls on them
4. Bake at 200 degree for 30mins
5. When done, use a sieve and sprinkle icing sugar over the pastry rolls.

Tips:
Don't forget to thaw the frozen filo pastry sheets an hour before starting :)

Viola! Just like how they look in fancy restaurants!
